Saucy Chicken with Roasted Veggies

 This chicken has Eastern European flavors, something very close to my heart and taste buds from my childhood. It's super simple, easy and so very delicious. The key ingredients are Vegeta, smoked paprika and rubbed sage. They are all fairly easy to find. Vegeta is an Eastern European salty blend, super delicious. It's found at most stores that carry International food. The roasted veggies are a nice addition and make this simple dish quite hearty. So yummy! Enjoy!
Ingredients:
For chicken:
-2 Tbs grapeseed oil (vegetable oil works as well)
-4 chicken breasts, boneless, skinless, cut into chunks
-1.5 tsp Vegeta
-1 tsp smoked paprika
-1/2 tsp rubbed sage
-2 shallots, diced
-1/3 cup white cooking wine
-1/2 cup heavy cream
For veggies:
-1.5 lbs baby potatoes, cut in halves or quarters, depending on their size
-1 lb asparagus, ends removed, then cut into 1.5 inch pieces
-olive oil cooking spray
-salt and pepper
Directions:
We'll make the chicken first, by heating the oil in large skillet.
Once the oil is hot, add the chicken chunks and season with Vegeta and paprika. Cook for 5-6 minutes, stirring occasionally. Add the sage and shallots. Give it a good stir and cook for a couple of minutes. Add the wine and simmer for 5 minutes.
Finally, stir in cream and cook for 2 more minutes. Remove from stove.
While that's cooking, preheat the oven to 425 F.
Coat a baking sheet with the olive oil cooking spray and sprinkle with some salt and pepper. Add the prepared potatoes and asparagus. Arrange in single layer. Generously spray on top with more olive oil cooking spray and season with salt and pepper.
Roast in preheated oven for 20 minutes.
Serve immediately with the yummy saucy chicken. YUM! Enjoy!
