Ginger-Lime Ramen Soup with Beef
What a delight this soup is! The flavors are fantastic together. It's also super quick to put together. Enjoy!
Ingredients:
-1 Tbs oil
-1.5 lbs steak
-salt and pepper
-10 cups chicken broth
-2 inches ginger, peeled, halved and smashed
-1 lime
-4 (3 oz each) packages ramen noodles; discard the seasoning packs
-1/4 cup soy sauce
-1 bunch green onions, cleaned and diced
Directions:
Heat oil in skillet. Lightly season the steak with salt and pepper on both sides. Add to the hot oil and sear for 6 minutes on each side.
Remove from the skillet and let it rest.
Bring the chicken broth to a boil. Add the crushed ginger. Peel the rind from the lime and add it to the broth. Lower the heat, cover, and simmer for 10 minutes.
Discard the ginger and lime zest from the broth. Break the ramen noodles in half and add to the broth. Cook for 3 minutes.
Juice the lime and add the juice to the ramen. Stir in the soy sauce and green onions. Turn off the heat.
Half the steak lengthwise, then thinly slice it.
Ladle the soup into bowls and top with the thin slices of steak. YUM! Enjoy!
