Easy French Beef Stew

 I can't even begin to describe the flavors in this stew! It really is like a piece of heaven in your mouth. So tender, so flavorful, so absolutely delicious! Some simple mamaliga or hot fresh bread are the perfect companions to this dish. So delicious! Enjoy!

Ingredients:
-1 Tbs extra virgin olive oil
-1 onion, finely diced
-3 garlic cloves, minced
-2 cups white cooking wine
-1 1/2 lbs beef, cut into chunks
-3 small potatoes, peeled and cut into chunks
-1 (14.5 oz) can stewed tomatoes
-2 Tbs honey Dijon mustard
-1 1/2 tsp dry thyme leaves
-1/2 tsp salt
-1/2 tsp pepper
-1 lb mushrooms, thickly sliced or cut into quarters
Directions:
Heat oil in large saucepan. Add the onion and garlic. Give it a good stir and cook for about 5 minutes.
Add the wine and give it a good stir. Lower the heat and add the beef, potatoes, tomatoes, mustard, thyme, salt, and pepper. Stir well and bring to a boil. 
Reduce heat to low, cover, and simmer for 1 hour.
Add the mushrooms, give it a good stir, cover and continue simmering on low for another hour.
Serve and enjoy this heavenly concoction. YUM!
