Mint Brownies

I love mint brownies.  They're one of my most favorite treats. I cheated a little on these, since I used a boxed mix. The mint buttercream and chocolate ganache are super easy to make and they barely take any time.  The hardest part is to wait for the brownies to cool off, so that you can frost them. :)  So delicious and rich!  Enjoy!
Ingredients:
-1(18.5) box fudge brownie mix, plus all ingredients on the box (eggs, oil, water)
For Mint Buttercream:
-1 cup (2 sticks) unsalted butter, at room temperature
-4 cups powdered sugar
-1 tsp mint extract
-3 Tbs heavy cream
-5-6 drops green food coloring
For Chocolate Ganache:
-1 cup heavy cream
-2 cups semi-sweet chocolate chips
Directions:
Prepare the brownies in a 9x13 pan, according to your package directions. Remove from oven and let cool for 20-25 minutes.
While they're cooling, place all of the mint buttercream ingredients in your mixer's bowl and beat until smooth.
Once the brownies cooled enough, top with the buttercream. Make sure to spread it evenly. Refrigerate for 30 minutes.
While that's cooling in the fridge, place the cream in a small pan on the stove, over medium-low heat.  Add the chocolate chips and stir until all melted and well mixed. Remove pan from stove and let it sit for 5 minutes. 
Give it one good stir and pour on top of the buttercream.
Refrigerate that goodness for 2 hours, then cut and enjoy! YUM!
