Yields 32-34 cookies
-1/2 cup (1 stick) unsalted butter, at room temperature
-1/4 cup sugar
-1 cup packed brown sugar
-3 ripe bananas
-2 tsp vanilla extract
-1 tsp salt
-1 tsp baking soda
-1 Tbs cornstarch
-2 cups flour
-2 Tbs unsweetened cocoa powder
-1 1/2 cups semi sweet chocolate chips
Preheat oven to 350 F. Line a couple of cookie sheets with parchment paper and set aside.In your mixer's bowl, cream the butter, sugar and brown sugar. Add the peeled bananas, one chunk at a time. Mix very well. Add the vanilla, salt, baking soda and cornstarch. Keep on mixing. Stir in the flour, 1/2 cup at a time. Add the cocoa powder and chocolate chips. Once well mixed, scoop dough with a spoon and arrange cookies on prepared sheets.
Bake in preheated oven for 20 minutes. Remove from oven and let cool on sheets. Enjoy!
