Cheesy Artichoke Melts
I cannot describe how insanely good these gems are! The flavors are out of this world amazing! The artichokes with all the cheeses and seasonings are a marriage made in heaven. So, so, so good. The mixture yields quite a bit, but you don't need to use it all at once. You can refrigerate the leftover mixture, then make the sandwiches throughout the week. Enjoy!
Ingredients:
-12 oz marinated artichokes, roughly chopped
-2 cups freshly shredded white cheddar cheese
-1 cup freshly shredded mozzarella cheese
-1/2 cup freshly grated parmesan cheese
-1 cup mayonnaise
-1/2 tsp salt
-1/2 tsp onion powder
-1 tsp garlic powder
-1 crushed red pepper flakes
-good quality bakery rolls
-butter flavored cooking spray
Directions:
Preheat the oven to 400 F. Line a cookie sheet with parchment paper.
Place the bottom of a bun on the prepared sheet, then top with that amazing mixture (be generous). Cover with the top bun and spray generously with butter flavored cooking spray. Repeat with as many sandwiches as needed.
Bake in preheated oven for 10-12 minutes or until the top bun is beautifully golden brown and the cheese is melted.
Remove from the oven and let it sit for a couple of minutes. Enjoy that delicious cheesy goodness! YUM!
