Mushrooms and tater tots casserole

The beauty of casseroles is that you can mix them up however you want to. A friend of mine mentioned that she likes to add pepperoncinis to hers, which intrigued me. I added them to this one and it kicked it up a notch. As for the meat, you can use ground turkey or ground beef. This is one of our favorite combos. So yummy! I also like to use my wok, as I can use it both on the stove and in the oven (less dishes to clean, right?). Enjoy!
Ingredients:
-2 Tbs vegetable oil
-1 onion, finely chopped
-8 oz baby bella mushrooms, roughly chopped
-2 large garlic cloves, minced
-1 lb ground turkey or ground beef
-1 tsp salt
-1 tsp pepper
-1 cup milk (at least 2%)
-1 (10 3/4 oz) can cream of celery soup
-1/2 cup pickled pepperoncini, sliced and drained
-2 cups shredded cheddar cheese
-2 lbs frozen tater tots
Directions:
Preheat oven to 425 F.
Heat the oil in the wok. Add the onion and mushrooms. Cook for about 5 minutes, stirring occasionally. Add the garlic and cook for another minute. Stir in the ground meat and season with the salt and pepper. Cook for another 5 minutes or until the meat is no longer pink, breaking it up as it cooks. 
Stir in the milk, soup, and pepperoncinis. Give it a good stir and cook for a minute. Add 1 cup of the cheese and stir very well.
Sprinkle the remaining cheese on top. Add the tater tots on top of that.
Bake in preheated oven for 30-40 minutes or until nice and golden brown.
Remove from the oven and let it sit for 5 minutes. Enjoy!
