Hawai'ian Chicken Pan Sheet
This is another super easy and delicious meal for a busy night. The flavors blend beautifully together. Brown rice works great with this, as it gives it a little extra nutty flavor. So good! Enjoy!
Ingredients:
-olive oil cooking spray
-salt and pepper
-3 large chicken breasts, skinless, boneless, cut into bite-size chunks
-2 bell peppers (orange, yellow, or red-any combo), seeded and cut into chunks
-1 small red onion, quartered and cut into chunks
-1/2 cup Hawai'ian BBQ sauce (we prefer Sweet Baby Ray)
-1 (20 oz) can pineapple chunks, drained well
-juice from 1 lime-chopped green onions, for garnish
Directions:
Preheat oven to 350 F.
Coat a large pan sheet with olive oil cooking spray. Sprinkle with generously with salt and pepper. Top with the chicken, bell peppers, and onion. Spray on top with more cooking spray. Season with more salt and pepper. Give it a good stir. Add the BBQ sauce and give it another good stir.
Roast in preheated oven for 20 minutes.
Add the drained pineapple chunks and lime juice. Stir and roast another 20 minutes.
Serve immediately on top of brown rice and garlic with chopped green onions. YUM! Enjoy!
