Honey-Feta Roasted Chicken
Easy, quick, and delicious! Honey and feta are staples in Mediterranean cuisine, so for me, this is a taste of home. I served ours with some fresh French bread to dip in the yummy sauce, and a salad. Use chicken thighs for this, with the bone and skin on for that extra flavor. The ones from Costco are perfect for this dish. You can get 4-5 per pack, making it just right for this dish. Enjoy!
Ingredients:
-2 Tbs extra virgin olive oil
-4-5 chicken thighs, skin-on, bone-in
-seasoned salt
-garlic powder
-pepper
-1/2 cup honey
-2-3 tsp apple cider vinegar
-1/2-1 tsp crushed red pepper flakes (depends how spicy you want it)
-6 oz feta cheese, freshly crumbled
-dried parsley flakes
Directions:
Preheat your oven to 400 F.
Heat oil in wok or large oven proof skillet. Score the chicken thighs and season generously on both sides with seasoned salt, garlic powder, and pepper. Quickly sear on both sides in the hot oil, then set aside in the wok/skillet.
In a small saucepan, mix together the honey, vinegar, and red pepper flakes. Mix well and boil for 1 minute.
Carefully spoon the honey mixture on top of the chicken. Make sure to cover evenly all the chicken. Sprinkle the crumbled feta and parsley flakes on top.
Roast in preheated oven for 25 minutes or until chicken is cooked through.
