Cream of Asparagus Soup

This is sooo good! It makes enough for 4 small servings, so I will definitely double it the next time I make it. It's creamy and super delicious. The asparagus is at its prime right now during springtime, so take advantage of that. You can also make this with broccoli or cauliflower. Enjoy!
Ingredients:
-2 Tbs butter
-1 onion, finely chopped
-16 oz asparagus, trimmed and roughly chopped
-3 Tbs flour
-1 tsp salt
-1 tsp pepper
-3 cups chicken broth
-1 cup half and half
-real bacon bits, optional
-croutons, optional
Directions:
Melt butter in large saucepan. Add the onion and cook for a few minutes, until nice and translucent, stirring occasionally. Add the asparagus. Give it a good stir and cook for a couple of minutes.
Sprinkle the flour on top. Add the salt and pepper. Mix very well and cook for one minute.
Slowly, add the broth. Mix well and bring to a boil. Lower the heat, cover, and simmer for 10 minutes.
Using an immersion blender, process the soup until nice and creamy. You can also use a blender and process soup in batches.
Stir in the half and half. Give it one last good stir and ladle into bowls.
If desired, top with real bacon bits and croutons. YUM! Enjoy!
