Sheet Pan Moroccan Inspired Chicken and Vegetables

 The spices are the star of this dish. The flavor is great and everything is perfectly roasted in the oven. So yummy! Delicious! Enjoy!
Ingredients:
-8 chicken thighs, skin on, bone in
-4 medium potatoes, peeled and cut into chunks
-4 medium carrots, peeled and cut into chunks
-1 cup good green olives, pitted (castelvetrano are great for this dish)
-1/4 cup extra virgin olive oil
-4 garlic cloves, minced
-2 Tbs honey
-2 tsp cumin
-2 tsp turmeric
-1 tsp cinnamon
-1/2 tsp salt
-1/2 tsp pepper
-dry parsley leaves, for garnish
Directions:
Preheat oven to 400 F. Coat a large baking sheet with cooking spray. 
Score each chicken thigh (cut a slit on the side with the skin) and place on the prepared pan. Add the potatoes, carrots, and olives. Arrange them all in a single layer.
In a bowl, mix together the oil, garlic, honey, cumin, turmeric, cinnamon, salt, and pepper. Once well mixed, brush it on top of the chicken and veggies. 
Cover with foil and roast in preheated oven for 30 minutes. Remove the foil and continue roasting for another 30 minutes. 
Garnish with some parsley, if desired. Enjoy!
