Slow Cooker Whole Chicken
I kept on hearing that stuffing a chicken with pickles will make it super tender and delicious. So I decided to try it and it turns out that it's true! The chicken roasts in the slow cooker for a long time, which makes it super tender. Also, I used the trivet from my Instant Pot and that helped a lot. If you don't have one, just make balls of foil and stick them under your chicken. So good! Enjoy!
-1 (4-5 lbs) whole chicken, cleaned
-2 cups chicken broth
-2 Tbs poultry seasoning
-salt and pepper
-1 (16 oz) jar snack size dill pickles
Directions:
Place a small trivet on the bottom of your slow cooker and coat with cooking spray. If you don't have one, just make balls of foil and place them on the bottom of the slow cooker.
Pour the broth in the slow cooker.
Pat the chicken dry and generously season on both sides with the poultry seasoning, salt, and pepper. Carefully place on top of the trivet. Stuff the chicken with the snack sized pickles.

Cook on LOW for 8 hours.
Preheat the oven on HIGH broil. Carefully, transfer the chicken on a baking sheet. The trivet really helps here as it makes the transfer really easy. Leave the chicken on the trivet on the pan and broil for 5-7 minutes or until the chicken is golden brown.
Remove chicken from the oven, discard the pickles and enjoy! YUM!
