Bacon-Spinach-Orzo Salad

 What a wonderful flavor combination! The sweetness of the sun dried tomatoes goes perfectly with the saltiness of the bacon and crispiness of the shallot. So yummy! Enjoy!

Ingredients:
-2 cups dry orzo
-16 oz bacon, chopped
-1 shallot, diced
-1/2 cup white wine vinegar
-1.5 Tbs honey
-1/2 tsp salt
-1/2 tsp pepper
-5 oz baby spinach, chopped
-1/2 cup julienned sun-dried tomatoes
-5 oz Parmesan cheese, shaved
Directions:
Cook the orzo according to the package directions. Drain and transfer to a large bowl.
While the pasta is cooking, brown the bacon in a large skillet. Once done, remove onto plate lined with paper towels.
Return the skillet with the bacon grease to the stove. Add the shallot and cook for 2-3 minutes. Add the vinegar, honey, salt and pepper. Stir until well mixed and cook for 2-3 minutes.
Pour the dressing over the pasta in the large bowl. Add the spinach and tomatoes. Mix very well. Stir in the cheese. Give it one last good stir. 
Serve warm. Enjoy!
