"Taco" Peppers
I'm not sure what to call these, so I named them "taco" peppers. The bell peppers are filled with taco seasoned meat. They are super filling and so delicious. Enjoy!
-1 lb extra lean ground beef
-1 (1 oz) packet taco seasoning
-3 bell peppers, halved and cleaned (seeds and stems removed)
-shredded cheddar cheese
-shredded cheddar cheese
-sliced green onions
-1 tomato, chopped
Directions:
In a large skillet, brown the beef. Add the taco seasoning and follow the instructions on the package.
Once the meat is done, remove skillet from the stove.
Preheat oven to 350 F.
Line baking sheet with foil and spray with cooking spray. Layer the pepper halves on the baking sheet. Divide the taco meat evenly between the pepper halves. Top each with about 1 Tbs of the cheese and green onions.
Bake in preheated oven for 13-15 minutes or until the cheese is melted.
Remove from the oven, scoop onto plates and top with the tomato pieces.
