Instant Pot Lemonade-Ginger Glazed Chicken

 This is a nice little twist to the regular lemon chicken. The lemonade combines quite nicely with the spices and gives this chicken a unique flavor. Enjoy!

Ingredients:
-1 (12 oz) can frozen lemonade, thawed
-1 tsp ground ginger
-1 tsp salt
-1 tsp pepper
-2 tsp dried parsley leaves
-4 chicken breasts, skinless, boneless
-1/2 cup water
-1/4 cup cornstarch
Directions:
In a bowl, combine the thawed lemonade, ginger, salt, pepper, and parsley.
Coat the bottom of your IP with cooking spray. Pour some of the lemonade mixture on the bottom. Top with the chicken breasts. Pour remaining lemonade mix on top of the chicken.
Place the lid on top with the valve secured in the sealed position.
Set on manual pressure HIGH for 20 minutes. Do a quick release.
Remove chicken from the IP and shred, using 2 forks.
Set the IP on saute to make the glaze. Quickly whisk together the water and cornstarch and add to the lemonade sauce. Whisk together and cook on saute for 2-3 minutes or until glaze is nice and thickened. 
Turn off the IP. Add the shredded chicken. Give it a good stir to coat evenly.
Serve on top of rice. Enjoy!
