Slow Cooker White Bread

This is a nice, easy way to make bread. There's no need to let the dough rise, since the slow cooker takes care of that quite nicely. Also, I was a bit concerned that the bread might be mushy because the slow cooker tends to make food tender, but it turned out that I got a nice crust on it. Very yummy! I have an oval slow cooker, so I thought that my loaf pan was definitely going to fit, but it didn't. If you have the same problem, simply remove the porcelain insert and place the pan directly on the bottom. It cooks perfectly. So yummy! Enjoy!
Recipe yields 2 loaves
Ingredients:
-1 cup warm water
-1 envelope (2 heaping Tbs) yeast
-1 cup milk (at least 2%)
-2 Tbs sugar
-1 Tbs salt
-2 Tbs butter, melted
-4-5 cups flour
Directions:
Pour warm water into your electric mixer's bowl. Sprinkle the yeast on top and let it sit for 5 minutes.
Once foamy, start the mixer with the dough hook attached. Slowly, add the milk, sugar, salt, melted butter, and 1 cup of flour. Mix very well.
Add remaining flour, half of cup at the time. You don't need to add all 5 cups of flour. Add flour only until dough doesn't stick to the bowl anymore.
Once you reach that state, continue kneading the dough in your mixer for about 10 minutes.
Remove dough from bowl and divide in half.
Cover half of the dough and place in the fridge until ready to use.
Coat the sides and bottom of loaf pan with butter cooking spray. Shape the other half of dough into loaf and place in prepared pan.
Place pan in slow cooker (remove porcelain insert if pan doesn't fit in). Cover and cook on HIGH for 1.5 hours.
Remove from slow cooker and let it cool in pan for 5 minutes. Remove from pan and enjoy hot with some butter on it. Yum!
