Easy Roasted Baby Potatoes
I love baby potatoes. They're so small and cute and so delicious! And they're easy to work with. This recipe is super simple and easy and our family loves it. We often enjoy potatoes this way. Enjoy!
Ingredients:
-1.5 lbs baby potatoes
-2 Tbs extra virgin olive oil
-salt and pepper
Directions:
Preheat oven to 425 F.
Line a baking sheet with foil. Cut the potatoes in half or quarters, depending on how big they are. Drizzle with the oil and season with salt and pepper. Mix until all potatoes are evenly coated, then spread in a single layer.
Roast in preheated oven for 30 minutes or until beautiful and golden brown.
Serve immediately and enjoy!
