Apple-Cinnamon Bread
What a wonderful, tasty treat this bread is! It's moist, flavorful and packed with goodness. Enjoy!
Ingredients:
For cinnamon sugar:
-1/2 cup packed brown sugar
-1.5 tsp cinnamon
For bread batter:
-2/3 cup sugar
-1/2 cup (1 stick) unsalted butter, at room temperature
-2 large eggs
-2 tsp vanilla extract
-1.5 tsp baking powder
-1/2 cup milk (at least 2 %)
-1.5 cups flour
-1.5 cups flour
-2 small apples, peeled, cored, and finely chopped
Directions:
Preheat oven to 350 F. Coat the sides and bottom of regular loaf pan with baking cooking spray (the one with flour and butter). Set aside.
Mix the cinnamon sugar ingredients into a small bowl and set aside.
In your electric mixer, cream the sugar and butter. Add the eggs, vanilla, and baking powder. Once well mixed, add the milk and flour, half of cup at a time. The batter will be thick and that's ok.
Pour half of the batter in prepared pan. Top with half of the apples. Gently press apples into batter. Top with half of the cinnamon sugar. Repeat: batter, apples, cinnamon sugar.
Bake in preheated oven for 45-50 minutes or until toothpick comes out clean.
Cool in pan for 10 minutes, then remove bread from pan and cool completely on wire rack. Enjoy!
