Instant Pot Country Boil
This is one of my comfort foods, for sure. The combination of textures and flavors is amazing! And it's super easy and very filling. So yummy! Enjoy!
Ingredients:
-1.5 lbs baby potatoes
-1 (12 oz) package cajun style smoked andouille sausage, sliced
-4 tsp Old Bay seasoning, divided
-1 Tbs hot sauce (we prefer Frank's)
-4-5 ears corn (depends on how big they are), shucked and halved
-2 cups chicken broth
-1.5 lobs large shrimp, shell-on
-1/4 cup butter
-3 cloves garlic, minced
-1 tsp dried parsley leaves
Directions:
Place potatoes, sausage, 3 tsp of the seasoning, and hot sauce in your IP. Mix well. Add the corn and broth.
Secure the lid on top with the valve in the sealed position. Cook on manual HIGH for 5 minutes. Do a quick release.
Add the shrimp, place the lid on top with the valve in the sealed position, and cook on manual HIGH for 1 minute.
Do a quick release.
While the pressure gets released, melt the butter in skillet. Add the garlic, remaining tsp of seasoning and parsley. Cook for 1-2 minutes.
Once the pressure has been released, remove food from the liquid (discard the liquid) onto large platter. Top with the butter mixture. Dig in and enjoy!
