Instant Pot Cheesy Chicken-Cauliflower and Rice
Ingredients:
-2 chicken breasts, boneless, skinless, cut into chunks
-1 head cauliflower, cut into bite sized pieces
-1 cup chicken broth
-1 (10 3/4 oz) can condensed cheddar cheese soup
-1/2 tsp salt
-1/2 tsp pepper
-1 1/2 tsp onion powder
-2 tsp hot sauce
-1/4 cup heavy cream
-1 cup shredded cheddar cheese
-4 cups minute rice
Directions:
Coat the bottom of IP with cooking spray. Add chicken, cauliflower, broth, soup, salt, pepper, onion powder, and hot sauce. Give it a good stir. Set the lid on with the valve in the sealed position. Cook on manual HIGH pressure for 4 minutes.
Do a quick release, then remove inner pot from IP. Stir in the cream, cheese, and rice. Give it a really good stir, then cover and let it sit for about 5 minutes or until the rice is tender. Enjoy!
