Lexie's Pumpkin Spice Cookies
I seriously love it that my cute daughter is so into baking. She made these for us the other day and they were gone before I could take a decent picture! I managed to snap one and I'm glad I did because there were no more cookies in such a short span. These cookies are super moist and very flavorful. Enjoy!
Yields about 3 dozen cookies
Ingredients:
-3/4 cup unsalted butter, at room temperature
-1/2 cup sugar
-3/4 cup packed brown sugar
-1 large egg
-2 tsp vanilla extract
-1/2 cup canned pumpkin
-2 tsp cornstarch
-1/2 tsp cream of tartar
-3/4 tsp baking soda
-1/4 tsp salt
-2 tsp cinnamon
-3/4 tsp ground nutmeg
-2 1/2 cups flour
Cinnamon sugar:
-1/4 cup sugar
-1 1/2 tsp cinnamon
Directions:
In your electric mixer, cream the butter and sugars until fluffy. Add the egg, vanilla and pumpkin. Mix well. Add the cornstarch, tartar, baking soda, salt cinnamon, salt, nutmeg, and flour, 1/2 cup at a time.
Once well mixed, cover the dough and refrigerate for a couple of hours.
Preheat oven to 350 F. Line cookie sheets with parchment paper.
Prepare the cinnamon sugar by combining the ingredients together.
Roll the cookie dough into balls, then roll each ball into the cinnamon sugar. Place on prepared sheets and slightly flatten with your hands.
Bake in preheated oven for 10-12 minutes. Cool in pan for 10 minutes, then on wire rack. Enjoy!
