Vichyssoise with Zucchini
Our family LOVES vichyssoise. I make it as often as possible. Vichyssoise is a creamed, buttery soup out of leeks and potatoes. The flavors are absolutely amazing! The other day I received a huge zucchini from a friend and I wanted to do something a little different than the usual dishes. So, I added part of the zucchini to the soup. Big win! We now have a new favorite way of enjoying those yummy zucchinis. Enjoy!
Ingredients:
-1 Tbs butter
-1 Tbs extra virgin olive oil
-3 large leeks, cleaned very well and roughly chopped
-6 cups chicken broth
-2 lbs potatoes, peeled and diced
-1.5 lbs zucchini, chopped
-1 tsp salt
-1 tsp pepper
-2 Tbs heavy cream
-bacon bits, for garnish
-chives, for garnish
Directions:
Add the butter and oil to large pot. Once the butter is melted, add the leeks and cook for about 5 minutes. Add the broth, potatoes, zucchini, salt and pepper. Give it a good stir and bring it to a boil. Once boiling, lower the heat and simmer, uncovered for 30 minutes.
Using an immersion blender (or working in batches with a blender/food processor) process until soup is nice and creamy.
Stir in the cream. Ladle into bowls and top with bacon bits and chives. YUM! Enjoy!
