Sausage and Corn Chowder
I don't know how the weather is where you are, but ours just turned into crazy rainy and chilly. So, this chowder is absolutely perfect to warm us up. The flavors are fantastic! Enjoy!
Ingredients:
-olive oil cooking spray
-1 onion, finely diced
-1 lb bulk sage pork sausage
-2-3 potatoes, peeled and cubed
-2 tsp salt
-1 tsp pepper
-1/2 tsp ground marjoram
-4 cups water
-1 (14.5 oz) can cream-style corn, do NOT drain
-1 (14.5 oz) sweet corn, drained
-1 (12 oz) can evaporated milk
Directions:
Coat the bottom of a large pot with the cooking spray. Heat it up, then add the onion and sausage. Break up the sausage chunks as they brown. Add the potatoes, salt, pepper, marjoram, and water. Give it a good stir and bring to a boil. Reduce heat and simmer, uncovered, for 15 minutes. Finally, add the cream-style corn, sweet corn, and evaporated milk. Give it another good stir and cook for 5 more minutes.
