Garlicky Pork and Eggplant

'Tis the season of eggplant and I couldn't be happier. I love eggplants! I also love the fact that they are super easy to grow, so it's super nice to be able to pick up mine straight from the garden. So delicious! This is a simple dish with mouthwatering results. We like ours on top of brown rice, but white rice or some simple fresh bread for dipping works perfect. Enjoy!
Ingredients:
-1.5 lbs eggplant, cut into 1.5 inch chunks
-1.5 lbs pork, boneless, cut into chunks
-2 Tbs vegetable oil
-salt and pepper, to taste
For garlic sauce:
-4-5 garlic cloves, minced
-4 green onions, cleaned and finely chopped
-1 jalapeno, seeded and chopped
-1 Tbs sesame seeds
-2 Tbs soy sauce
-2 Tbs fish sauce
-1 Tbs sugar
-1 Tbs crushed red pepper flakes
-1 Tbs sesame oil
-a sprinkle of black pepper
Directions:
Steam the eggplant chunks. I did mine in the rice cooker and they were perfect.
Mix together all of the sauce ingredients. Set aside.
Heat oil in wok and quickly sear the pork chunks. Season with salt and pepper. Add the steamed eggplant and cook for a couple of minutes. Pour in the sauce. Give it a good stir and cook for another minute. Serve immediately on top of rice. Enjoy! YUM!
