Meatballs and Gnocchi
This is quick and yummy! The sauce is nice and creamy, and the flavors are fantastic together. A wok work great for this dish, but any deep pan will do. Add a green salad as a side, and you have a filling and delicious meal. Enjoy!
Ingredients:
-1 Tbs extra virgin olive oil
-1 onion, finely chopped
-4 cloves garlic, minced
-2 lbs frozen meatballs (homestyle)
-2 cups beef broth
-1lb dry gnocchi
-1 cup heavy cream
-zest from 1 lemon
-1 Tbs freshly squeezed lemon juice
-1/2-1 tsp salt
-1/2-1 tsp pepper
-1 cup shredded mozzarella
-1/2 cup shredded parmesan
-2 tsp dried parsley leaves
Directions:
Heat the oil in the wok or deep pan. Add the onion and saute for a couple of minutes. Add the garlic and cook for another minute. Stir in the frozen meatballs. Mix well and cook for 2-3 minutes. Pour in the broth and give it a good stir, scraping off the bits on the bottom.
Lower the heat and simmer for 5 minutes. Add the gnocchi and the cream. Mix well and simmer for 5 more minutes.
Add the zest, lemon juice, salt, and pepper. Give it a good stir. Add the cheeses and parsley. Give it one more good stir until the cheese is all melted.
Scoop onto plates and enjoy! YUM!
