Thai Coconut-Shrimp Soup

This is an absolute delight! It's sweet and creamy, and oh, so delicious! Don't let the terrible picture I took deceive you. lol! There is so much flavor packed in there. So, so good! Enjoy!

Ingredients:
-1 Tbs vegetable oil
-2 inches fresh ginger, peeled and grated
-2 tsp red curry paste
-1 Tbs lemongrass paste
-4 cups chicken broth
-3 Tbs fish sauce
-1 Tbs packed brown sugar
-3 (15 oz each) cans coconut milk
-8 oz shiitake mushrooms, sliced
-1.5 lbs shrimp, peeled, deveined, with tails removed
-juice from 1 lime
-1/2 tsp salt
-1/2 tsp pepper
Directions:
Heat the oil in sou pot. Add the ginger, curry paste, and lemongrass paste. Give it a good stir and cook for 1 minute. Add the broth, fish sauce, and brown sugar. Mix well and bring to a simmer. Reduce heat and simmer for 15 minutes. 
Stir in the coconut milk and mushrooms. Simmer for another 5 minutes. 
Add the shrimp and cook for 5 more minutes.
Finally, add the lime juice, salt, and pepper. Give it one last good stir and serve! Enjoy! YUM!
