Sweet and Tangy Meatball and Rice Casserole
This is super easy to put together and absolutely delicious! The flavors are wonderful together. You can use any veggies you like. Our family loves carrots and edamame, so that's what I like to put in ours. Also, you can make your own meatballs or use frozen store bought ones when you're strapped for time. Whatever you choose, this will come our delicious! So, so good! Enjoy!
Ingredients:
For Sauce:
-2 large garlic cloves, minced
-1/3 cup honey
-1/4 cup soy sauce
-3 Tbs ketchup
-2 Tbs water
For Casserole:
-olive oil flavored cooking spray
-1 cup jasmine rice
-12 oz bag frozen carrot slices (keep frozen)
-8 oz bag frozen edamame, shelled (keep frozen)
-2 cups chicken broth
-1.5 lbs homestyle frozen meatballs
Directions:
Preheat oven to 375 F.
Combine all sauce ingredients in a small saucepan, over medium heat. Stir until well combined. Once the sauce starts to bubble, let it simmer for 1 minute, then remove from stove.
Coat a 9x13 baking dish with olive oil cooking spray. Pour the rice on the bottom and spread evenly. Top with the carrots and edamame. Spray the top of the veggies with more cooking spray. Add the broth and stir gently, making sure everything is well mixed. Add the meatballs on top, gently pressing them down into the rice mixture. Pour the honey sauce evenly on top of the dish.
Cover tightly with foil and bake in preheated oven for 40 minutes.
Remove the foil and cook for another 15 minutes. Enjoy! YUM!
