Slow Cooker Tuscan Chicken

Easy and delicious! This chicken is super tender and packed with flavor. I served ours with some delicious garlic bread. Enjoy!
Ingredients:
-1 (8oz) jar sun dried tomatoes, packed in oil
-1 (12 oz) jar quartered marinated artichoke hearts **keep 2 Tbs of the marinade and discard the rest
-1 onion, finely diced
-6 garlic cloves, minced
-2 tsp salt
-2 tsp pepper
-4 chicken breasts, skinless, boneless
-8 oz baby spinach
Directions:
On the bottom of your slow cooker, half of the tomatoes and oil, half of the artichokes and 1 Tbs of the marinade, half of the onion and garlic, 1 tsp salt, and 1 tsp pepper. Lay the chicken breasts on top of that and add the other half of the ingredients. Do NOT add the spinach yet.
Cover and cook on LOW for 8 hours.
Add the spinach and cover. Let it sit for 10 minutes, then stir it a little bit.
Serve with some yummy garlic bread on the side. So good! Enjoy!
