Stuffed Mushroom Casserole

 So easy and so tasty! This is a fantastic dish, hearty, and delicious. Enjoy!
Ingredients:
-1 lb sage sausage
-16 oz baby bella mushrooms, roughly chopped
-1 onion, finely chopped
-2 cloves garlic, minced
-1/2 tsp salt
-1/2 tsp pepper
-2 cups shredded mozzarella cheese, divided
-3/4 cup Italian style Panko breadcrumbs
-3 Tbs extra virgin olive oil
Directions:
Preheat oven to 350 F.
Brown the sausage in a wok, breaking the clumps as it cooks. Stir in the mushrooms and onions.Cook for about 5 minutes or until the veggies are nice and soft. Add the garlic, salt, and pepper. Cook for one more minute.
Remove the wok from the stove and stir in 1 cup of the cheese. Once well mixed, sprinkle remaining cheese on top.
Quickly mix the breadcrumbs with the olive oil. Sprinkle on top of the casserole.
Bake in preheated oven for 15 minutes. Serve and enjoy. YUM!
