Slow Cooker Southwest Stuffed Peppers
Super easy and super yummy, this is one of those perfect dishes at the end of a busy day. And your house will smell amazing while this goodness is slowly cooking. We like ours with a dollop of sour cream on top. So good! Enjoy!
Ingredients:
-5-6 bell peppers (any color; amount depends on how big they are)
-1/2 lb ground beef, browned and drained
-1 (15 oz) can black beans, rinsed and drained
-1 small onion, finely chopped
-1/3 cup uncooked rice
-1/2 cup frozen corn
-1 tsp chili powder
-1/2 tsp ground cumin
-3/4 cup chunky salsa
-1 cup shredded pepper jack cheese
-sour cream, for topping
Directions:
Prepare the peppers for stuffing by removing the tops and seeds.
In a large bowl, combine the beef, beans, onion, rice, corn, chili powder, and cumin. Give it a very big stir. Add the salsa and cheese. Mix very well.
Coat the bottom of your slow cooker with cooking spray.
Fill the peppers with the beef mixture and carefully place in the slow cooker.
Cook on LOW for 4 hours.
Serve with a dollop of sour cream on top. Enjoy! YUM!
