Chicken and Cabbage Stir-Fry

Quick, easy, and delicious! And quite healthy too, plus no salt. This is one of our favorites. Enjoy!
Ingredients:
-2 Tbs vegetable oil
-2 cloves garlic, minced
-1 jalapeno, seeded and chopped
-2 chicken breasts, boneless, skinless, cut into chunks
-2 Tbs cornstarch
-1 small head cabbage, chopped (about 4 cups of cabbage)
-1/4 cup soy sauce
-1 Tbs rice wine vinegar
-2 tsp packed brown sugar
-1/2 tsp ground ginger
-3 Tbs water
Directions:
Heat oil in wok or large skillet. When hot, add the garlic and jalapeno and cook for 1 minute.
While that's cooking, add the cornstarch to large resealable plastic bag. Add the chicken chunks and shake to coat evenly. Add to the hot oil. Cook for 5-6 minutes or until golden brown on the outside.
Add the cabbage. Cook for 2-3 minutes or until cabbage starts to wilt.
Whisk together the soy sauce, vinegar, sugar, ginger, and water. Pour over cabbage mixture. Give it a good stir and cook for a couple of minutes.
Serve immediately over cooked rice. Enjoy!
