-2 cups frozen Southern style hash browns
-2 Tbs butter
-1 medium onion, finely chopped
-1 red bell pepper, chopped
-1 yellow bell pepper, chopped
-4 garlic cloves, minced
-1/2 tsp cayenne
-salt, to taste
-pepper, to taste
-1 Tbs smoked (or regular) paprika
-1/4 tsp dried oregano
-2 chicken breasts, cut into chunks
-1/4 cup chicken broth
-1 Tbs dried parsley
-1 Tbs lemon juice
Preheat oven to 325 F.
Bring some water to a boil. Add hash brown and cook for about 10 minutes. Drain and set aside.
Meanwhile, melt butter in large oven proof skillet. Add onion, bell peppers and garlic. Saute for a few minutes. Add cayenne, salt, pepper, paprika and oregano. Stir in the chicken and cook through. Once chicken is cooked, add broth, parsley and lemon juice. Allow to simmer for a few minutes. Add the cooked potatoes. Bake in preheated oven until potatoes are crunchy, for about 10-15 minutes.
